| Lab Moo Savoury Pork Salad |

Ingredients
2 cups ground lean pork 5-6 tbsp lime juice 2 tbsp ground pan roasted rice or dry breadcrumbs ½ teaspoon ground chilli 2 tbsp thinly sliced shallots 2 spring onions, sliced 1 coriander plant chopped 2 tbsp fish sauce ½ cup mint leaves
Preparation
Mix the port with 4 tbsp lime juice and work with squeezing movements of the hand; then squeeze the pork to drive out excess liquid. (Keep the liquid for later). Now put the pork, then the liquid in pan and heat until boiled , stir fry the pork in the boiled liquid until cooked.
Allow the pork to return to room temperature. Then mix the pork, pan-roasted rice (or breadcrumbs), ground chilli, shallot, spring onion and coriander plants; season to taste with the fish sauce and the remaining lime juice.
Sprinkle with mint leaves and serve with yard long beans, cabbage, shallots and spring onion. |
